1 medium sweet potato
1 tsp. oregano
1/2 tsp. onion powder
salt to taste
1 tbsp. coconut oil
(TIP – Use Herbamare instead of other spices and herbs)
Shred sweet potato in food processor. In a large bowl mix with eggs and other ingredients. Warm coconut oil in large skillet and form sweet potato mix into 5″ pancakes.
Cook until browned on both sides.
