Sprouted salsa

Sprouted mung beans
Cherry tomatoes – chopped
Avocado – cubed
Fresh parsley – chopped
Sea salt & pepper
Lemon juice
Olive oil
Balsamic vinegar

Mix all the ingredients up in a bowl and add seasonings to taste.
This can be changed by adding chopped capsicum, cucumber, different herbs such as coriander etc. and changing the oil to sesame, and the vinegar to tamari/soy for a completely different flavour.
