Spicy bean burgers

50g brown rice – cooked
1 tin kidney beans
1 small onion – chopped
1 garlic clove – chopped
1 small yellow capsicum – chopped
25g sunflower seeds
1/2 tspn chilli powder
1 bunch fresh coriander

Place beans, onion, garlic, capsicum, seeds, chilli, coriander & rice into a food processor.
Blend until a thick paste is formed. Chill paste in bowl for 20 minutes in the fridge.
Heat the oven to 200, place baking paper on a flat tray.
Roll the mixture into 8 balls and flatten on the tray. Bake for 25 mins until brown around the edges.
Leave burgers for a few minutes to firm up, and serve with salad, baked potato, and yoghurt based dip, avocado or salsa.
