Roasted veggies

Most veg work well, including root veg, onions, garlic, zucchini, brussel sprouts (quartered), broccoli, cherry tomatoes, capsicum, mushrooms

Place all veg in a large roasting pan, drizzle half & half with olive oil & balsamic vinegar. Season with salt, pepper, some dried herbs or chilli flakes if you like. Cook for 45 mins or until tender.  Finish with a squeeze of lemon juice.
