Pasta/pizza sauce with hidden veggies


Most kids want to eat pasta, and hiding veggies in a pasta sauce (especially tomato) can be a good option if they are fussy. That also applies to adults! This recipe from thermobexta combines veg with a little sweetness to please the palate. You could also use it as a pizza base sauce.

1 red onion, peeled and quartered
1 clove of garlic, peeled
10g extra virgin olive oil
400g tin tomatoes
1 carrot, (120g) peeled and cut into chunks
1/2 red capsicum, (100g) cut into pieces
1 celery stalk, (80g) cut into pieces
50g zucchini or broccoli
1/2 tsp herbamare or 5-10g vegetable stock paste
1 tsp honey

Cook all ingredients in a pan, starting with sauteeing the onion and garlic, then adding the rest. Let reduce over 45-60 minutes until everything is softened. Blitz until smooth in a blender, and no traces of vegetables are present. Serve as desired.
