Home Made Baked Beans

1 tin borlotti/cannelini beans
1 tin chopped tomatoes
1 tbspn extra virgin olive oil
1 tbspn tomato paste (optional)
Onion, garlic, zucchini, carrot, broccoli, pumpkin, kale….any veg!
Olives, artichokes or any other added ingredients (optional)
Seasonings – sea salt, pepper, mixed herbs, turmeric, red wine vinegar, fresh parsley/basil/chives

METHOD
Fry up the chopped onions and garlic in olive oil, add dried herbs followed by veggies. Cook until softened.
Add tin of drained beans, tomatoes and other ingredients such as olives etc. Allow to simmer for at least 10 minutes.
Add tomato paste to thicken sauce if required, with a splash of red wine vinegar/fresh herbs/more seasoning at the end.
