Sweet sushi is something different, and also fun to make! There are lots of filling options, so here are a few ideas…. The iodine in the nori rolls providing nutrients that we can often lack in our daily diet.
Apple & lettuce: Use slices of apple, lettuce leaves and some raisins if you like a bit sweeter. Spread tahini paste on the nori, then add other ingredients and roll.
Macadamia crumble: In a food processor, combine a handful of macadamia nuts with 2 tablespoons of sesame seeds. If using unsalted macadamias, feel free to add a pinch of salt and a dash of honey too. Roll inside nori, adding sliced fruit if you like.
Pineapple and date filling: Add about ⅔ cup of dates and pulse in food processor until broken up. Next, add the pineapple and unsweetened coconut and blend until all ingredients are incorporated. Place on nori sheet and roll up.
