1 cup quinoa, rinsed and soaked
2 cups water
Pinch sea salt
½ cup peas
1 diced tomato
½ sliced cucumber
6 olives – cut in rings
Chives & parsley – minced
½ tspn each thyme & marjoram
3 tbspns lemon juice
Soy/tamari sauce to taste
Combine quinoa, water & salt in pot, cover.
Bring to boil, simmer for 20 mins
Steam peas for 1 minute, place in ceramic bowl, mix with other ingredients.
Add quinoa, gently toss together.
