Dressings

These dressings are great for adding onto salads, mixing in with some drained lentils/chick peas/4 bean mix for a quick lunch, or also on cooked vegetables

BASIC OLIVE OIL & LEMON DRESSING (from Jamie Oliver)
2 tbspn lemon juice
5 tbspn olive oil
1 tspn each of salt & black pepper
This can be changed by adding balsamic vinegar instead of the lemon juice, and chopped herbs instead of the salt. By doing this you will dramatically alter the flavours to keep things interesting.

HONEY, WHOLEGRAIN MUSTARD & GARLIC DRESSING
1/2 tspn chopped/crushed garlic
1 tbspn honey
1 tbspn wholegrain mustard
2 tbspns lemon juice
5 tbspns olive oil

TAHINI & LEMON DRESSING
Tahini is from sesame seeds, so is full of essential fats and calcium. This tastes really good drizzled on steamed veggies (especially the dark green leafies & broccoli!)
Use 2-3 tbspns of unhulled (dark) tahini
Add a clove of crushed garlic
Add the juice of 1/3 lemon or more according to taste
Chilli flakes if you like
